Ingredients:
Sweet Pumpkin cut- 2 cups
Green chili- 3
Oil- 2 tsp
Coconut gratings- 2 tbsp
Mustard seeds- 1/2 tsp
Urad dal- 1/4 tsp
Red chili- 1-2
Curry leaves- 3-4
Turmeric-1/4 tsp
Cilantro cut- 2 tbsp
Lemon juice- 2tsp
Water- 1 cup
Salt to taste
Method:
Take a pan and add oil. Add the seasoning ingredients one by one (Mustard, urad dal, red chili, turmeric, curry leaves). Now add the cut sweet pumpkin. Mix well. Add water. Cover and keep on medium flame. Cook for 10 minutes. The sweet pumpkin will be soft now and the water evaporated. Add salt, coconut gratings, Cilantro, lemon juice and mix well. Serve with rice/roti
