Palak Paneer (Dhabha Style)



Ingredients:
Palak/Spinach- 4 cups cut
Paneer- 2 cups cut into squares
Onion- 1 small
Tomato- 1
Cumin seeds- 1 tsp
Ginger- 1/2 inch
Green chili- 2
Bay leaf- 2
Cumin and coriander powder- 1 tsp each
Turmeric- 1 tsp
Garam masala- 1 tsp
Kashmiri Red Chili powder- 2 tsp
Cilantro- 1/4 cup chopped
Yogurt- 1/4 cup
Heavy cream- 2 tbsp
Nutmeg powder- a pinch
Sugar- 1 tsp
Salt to taste
Oil- 1 tbsp

Method:
Add oil to the pan. Add cumin seeds and allow it to splutter. Now add bay leaf, ginger, green chilli and stir well.
Add cut onions and saute till golden brown. Add chopped tomatoes and cook until tomatoes are mushy.
Lower the flame and add yogurt, and other spices( Cumin and coriander powder, turmeric, red chili powder, garam masala, sugar, salt, nutmeg powder). Stir on low flame for couple of minutes. Add chopped spinach now. Keep mixing well until the spinach cooks. Add cilantro and let it cool.
Put the mixture in a mixer or puree in hand held mixer.
Add the puree to a pan, add heavy cream, cut paneer. You can add little water if the puree is very thick. Bring it to boil and serve hot garnishing with grated paneer and heavy cream.
Enjoy with rotis/ jeera rice.
