Mixed Vegetable Curry- Restaurant Style




Ingredients:

Mixed vegetables- 3 cups
(potatoes,carrots, bellpepper, peas, cauliflower, beans)
Butter- 2-3 tbsp
Cream- 2-3 tbsp
Coriander powder- 1 tsp
Cumin powder- 1 tsp
Kashmiri red chili powder- 2 tsp
Garam masala- 1 tsp
Kasoori Methi -1 tsp
Ginger paste- 1 tsp
Cilantro leaves- 2 tbsp
Salt to taste

Gravy ingredients:

Onion- 1
Tomato- 3
Cashew nuts- 15-20
Oil- 2 tbsp

Method:

For Gravy: 
Add oil in a pan. Add onions and after it becomes translucent add tomatoes and cashews. Cook until tomatoes are mushy. Turn off and let it cool. Make a paste adding little water.

For the Curry:
Add oil to a pan and fry each of the vegetables and keep it aside.
Add butter to a pan and add ginger paste. Now add the gravy, salt, red chili powder and cook until it boils.
Now cover and cook for 20 mins in medium flame until the gravy leaves oil to its sides.
Add all the fried veggies and other masala powders. If its too thick you can add little water. Add cream and cover and keep it on medium flame for 5-10 mins. 
Garnish with cream and cilantro leaves and serve hot.
