Masala Vegetable Khichadi



Khichadi is one of the best comfort food and a one pot meal. Masala Khichadi is combined with flavorful spices and fresh mixed vegetables.

Ingredients:
Rice- 1 cup
Whole Moong /Split moong dal- 1/2 cup
Moong dal- 1/4 cup
Potato, peas,carrot- 2 cups
Water- 41/2 cup
Turmeric-1/2 tsp
Ghee- 11/2 tsp
Curry leaves- 5-10
Hing- a pinch
Ginger paste -1 tsp
Green chili slit- 2
Salt to taste

For the seasoning:
Ghee/Butter- 2 tsp
Jeera- 1 tbsp
Turmeric- 1 tsp
Coriander powder- 1 tsp
Kasmiri redchili powder- 1 tsp
Coriander leaves- 1 tbsp

For the seasoning to be garnished:
Ghee- 1 tsp
Red chili- 1-2
Red chili powder- 1/2 tsp
Coriander leaves- 1 tsp
Method:
Wash Rice and Whole moong, Moong dal and soak it for 20 minutes. Drain the water.
In a kadai, add Ghee. Add jeera and after it splutters add dry red chili, curry leaves, turmeric, Green chili, coriander powder, ginger paste,hing and saute it for a minute and turn off the flame.

Add to the cooker/Instant pot Rice, Moong dal, Whole moong. add the cut veggies. Add the seasoning and salt. Add water. Pressure cook (4-5 Whistles) or 10 minutes in Instant pot.

Mix well after it is done. If the consistency is too thick then add some water and bring it to boil.

Before serving add the second tadka and serve hot.
