Kanchipuram Idli





Kanchipuram Idlis are well known in Tamilnadu. They are prepared from the idli batter with added spices and seasoning, then poured in a stainless steel tumbler to steam. Usually, Kanchipuram idlis are steamed in banana leaf. These idlis are offered as prasadam in Varadaraja Swamy Temple in Kanchipuram.

Ingredients:
Idli batter- 2 cups
Soaked and drained chana dal- 2 tbsp

For seasoning:
Ghee- 2 tbsp
Mustard seeds- 1 tsp
Urad dal- 1 tsp
Black pepper corns- 1 tsp
Green chili cut- 2 tsp
Curry leaves chopped- 4-5
Cilantro chopped- 2 tbsp
Ginger grated- 1 tsp
Hing- a pinch
Cashews chopped- 8-10
Salt to taste

Method:
Take the idli batter in a bowl. Prepare the seasoning and add it to the batter. Mix well. 
Take small steel tumblers and grease it with ghee or melted butter. The idlis after they are steamed comes out easily.
Steam the idlis on medium flame for 15-20 minutes.
To check if the idlis are done, insert a fork, tooth pick in the idlis and if the toothpick comes out clean without any batter sticking to it then its done. 
Turn off the flame. After couple of minutes scoop the idlis with a spoon or a knife.
Before serving you need to cut the idlis in half and serve for easy consumption.
Serve hot with a dollop of ghee, coconut chutney, podi and sambar.
