Ginger Chutney



Ingredients:

Ginger - 50 grams
Red Chili byadagi- 15
Fenugreek seeds- 1 tsp
Urad dal- 3 tbsp
Mustard seeds- 1/2 tsp
Jaggery powdered- 2 tbsp
Tamarind juice- 3 tbsp
Hing- a pinch
Turmeric- 1/2 tsp
Curry leaves- 1 cup
Salt to taste

Method:
In a kadai heat 1 tbsp of oil. Add Fenugreek seeds. After it splutters add Urad dal. Urad dal should turn golden brown in color. Now add red chili and curry leaves and fry till done. Add Hing. Let it cool.
Cut the fresh ginger into small pieces.
Add all the ingredients which are fried in a mixer. Also, add ginger pieces, turmeric, tamarind juice, salt, jaggery. Grind it with little water.
Add seasoning of mustard seeds, red chili and hing in the end and serve with hot rice/chapati/dosa/idli.
